Union Square Highrise

August may not be the holiday it is for many of our European friends, but Americans can still kick off one of the hottest months of the year with a cocktail.
New Yorkers in particular may enjoy the Union Square Highrise, a gin and champagne concoction served Thursday at Starwood Preferred Guest’s Members for a Culinary Experience with Todd English.
Held at OLiVES, his recently-renovated restaurant bordering the namesake park, the evening included five courses of food and wine pairings by Chef English.
Sadly, we can’t bring PEOPLE.com readers the dinner, but here is the drink:
Union Square Highrise
(Makes 1 cocktail)
• 1.5 oz Bombay Sapphire East
• 3 oz. rosé champagne
• .5 oz. simple syrup
• .5 oz. lime juice
• 3 leaves of fresh basil
• 5 blueberries
Combine two of the basil leaves, berries, lime juice and simple syrup in a mixing glass and muddle. Add gin, top with ice and shake vigorously. Pour contents into a highball or Collins glass and top with rosé champagne. Garnish with a pressed basil leaf.
